As long as you're making a good profit, you can just buy them. You don't need to produce for yourself all the raw materials you use. You can always build farms again when the price of water crashes. Farms unprofitable because water is really expensive? It probably makes sense to scrap them for now. Got a patent lab but you've already researched the patents you need? You don't need the lab anymore, so put something else there. Is the price of aluminum down to $4 and you've got a few hundred units stockpiled? Tear down the mine and put something else there (possibly a solar panel, if the mine was on a distant, isolated tile). Scrap buildings that aren't profitable or useful. Food may be $300 per unit, but if water costs $150, you won't be making any money. Try to build things that produce the highest net profit, not just the highest-priced output good. Buy them early before the price spikes (mainly talking about steel and glass for HQ upgrades, though it depends on which HQ you're playing as)
